¾ cup peanut butter (smooth or crunchy)
½ cup maple syrup
Pinch of salt
Dash of water
½ cup protein powder
2 cups soy protein crisps or puffed rice
¼ cup walnuts, roughly chopped
¼ cup sultanas
180g dark chocolate, melted
Method
- Combine the peanut butter, maple syrup, and salt in a medium pot and heat gently to melt together.
- Add the protein powder and just enough water to help incorporate the protein powder into the mixture. Stir it really well until smooth.
- Add the protein crisps or puffed rice, walnuts and sultanas. Mix well.
- Form into balls and place on a lined baking tray. You can get about 12 golfball-sized balls or 16 more petite ones with this recipe. Freeze for 30 minutes until set.
- Melt the chocolate in the microwave or in a double-boiler and coat the balls. Chill until firm.
- Store in the fridge.
