A tray bake is the ultimate in dinner simplicity. You bung a bunch of stuff on an oven tray, stick it in a pre-heated oven and voila; dinner.
Some of this week’s recipes are literally that easy. The trickiest part of the roast veg and lentil dish – a hearty vegetarian dish that could be easily made vegan by substituting cream for coconut cream – is boiling some vinegar, while the only technical skill you need for the chicken is zesting a lemon.
The meatballs do require the moulding of the balls themselves, though this is a task I encourage you to assign to any willing children, but really that’s about as tricky as anything gets this week.
All these recipes are highly adaptable too, so please feel free to roast or, in the case of the meatballs, peel any veg you see fit (and if you wanted to serve that recipe over plain noodles, no one will judge you).
