7.30am Chia pudding with coconut milk, berries and seeds. I make this in big batches and keep it in the fridge.
9.15am A decaf almond cappuccino after the kids have been dropped off and before taking my dog for a walk.
11.30am I take an early lunch. I work from home, so I usually make a salad with whatever is in the fridge. Today it’s rainbow salad with hummus, goat’s cheese, two poached eggs, seed mix, herbs from the garden and a dressing of olive oil and apple cider vinegar.
2pm I buy a smoothie on the road between meetings.
4pm Dates filled with peanut butter
6pm Dinner with the kids is poke bowls made with teriyaki salmon, brown rice, sweet potato, edamame, broccoli and grated carrot, finished with a sesame ponzu dressing.
7.30pm A homemade brownie Mum brought over and a digestive tea.
